Chicken curry is a very delicious dish served across several parts of the world. It is mostly preferred in Asian countries like India & China where they serve it with rice, chapati, and naan.
Here in the post, I will describe the simplest way to make chicken curry Indian style. Here I have used the simple ingredients available at every Indian home.

What is chicken curry Indian style?
Chicken curry Indian style is a delicious dish where chicken pieces are marinated with spices and curd to make it tender. Then I cook it on a low flame along with other masala paste in a thick-based pan mostly known as kadai. Then garnished with coriander leaves and served hot with chapati, rice, or naan.
Ingredients for chicken curry Indian style
( serves 4 persons)
- Chicken cut 500 grams ( cut to small to medium size both bone & boneless)
- Onion 5 nos (Prefer the red variety)
- Mustard oil 50 ml(cold pressed mustard oil will give good flavor)
- Plain Curd 3 tablespoon
- Garlic 10 cloves
- Ginger small piece( 1.5 inch)
- Cinnamon 2 sticks
- Cumin seeds 1 tablespoon
- Cadmon 3 nos (both small and big)
- Cloves 6 nos
- Black pepper 1 tablespoon
- Turmeric 2 tablespoon
- Green chili 3 nos
- Kashmiri red chili powder 1 tablespoon
- Chicken masala 2 tablespoon
- Salt to taste
Preparatory Steps before cooking chicken curry Indian style
Marinate the chicken
Marinating the chicken will increase the tenderness as well as add a good smell & flavor to the chicken curry. For marinating
Take 500 grams of chicken ( Both with bones & boneless) in a bowl and wash it properly in water to make it clean. After that drain the excess water.
- Add 3 tablespoons of plain curd
- 2 tablespoons of mustard oil
- 1 tablespoon of turmeric powder
- 1 tablespoon of salt
- 1 tablespoon of Kashmiri red chili powder
Mix the marinade with chicken properly and set aside covered for 1 hour to marinate.
Make the masala paste
To make masala paste we need the following ingredients.
- 3 onions sliced
- 10 cloves of garlic
- 1.5 inches of ginger sliced
- 1 tablespoon of cumin seed
Take all the ingredients put all of them in a grinder jar and grind to make a fine paste.
Steps For Cooking of chicken curry Indian style
Step-1 ⇒ Put 4-5 tablespoons of mustard oil in a pot having a heavy base and keep it on the burner. The pot should be of heavy base as it will avoid burning of masala during sauteing.
Allow the oil to heat so that the smell of the oil comes out with little smoke
Step-2 ⇒ Then add the whole spices into it to crackle. The whole spices include
- Cinnamon 2 sticks
- Cardamom
- Cloves
- Black pepper
Care to be taken to avoid hot oil splash due to cracking of whole spices.
Step-3 ⇒ When the crackle stops add the sliced onion & green chili to it. Saute it with medium flame till the onions turn golden brown.
Step-4 ⇒ Then add the masala paste into it and saute in medium flame. After 1 minute add 1 tablespoon of turmeric powder to it.
Saute the masala till the smell of the raw masala paste vanishes.
You will notice that the oil starts separating from the masala. Then only you will know that the masala has been properly cooked.
Step 5 ⇒ Add the marinated chicken into the pan and mix well. Cook on medium flame for 2 minutes.
Step 6 ⇒ Then add the chicken masala and continue mixing on medium flame.
Step-7 ⇒ When the extra water of chicken dries out, add salt to taste. Continue sauteing for 15 minutes till the chicken pieces cook perfectly.
You can check them when the bones start releasing the flesh.
Step-8 ⇒ When the chicken is cooked perfectly add boiled water to the chicken and allow for boiling for 5 minutes. Do not add cold water as it will reduce the tenderness of the chicken. Taste the salt level and add if it is required.
Step-9 ⇒Then turn off the burner & garnish the chicken curry with fresh coriander leaves.
Now our chicken curry Indian style is ready to be served. You can take it with rice, or chapati. paratha or naan.
